Plum Cake
Finally my favorite time of the year is here. I love autumn, love autumn winds, chilly air and early autumn evenings. There is this special sense in the air what makes me feel so cozy and I have this warm feeling in my heart. Usually this is time when my family prepare all winter food stock, so we can taste summer when it is only snow all over the fields and roads. Then we remember every summers adventures, summer sun and we can long for next summer again.
This year I only had 2 bowls of harvest from my tiny garden. One of them was peas and second one was broad been. ( I’m still waiting for pears). These two bowls didn’t last for long. Actually only till next supper was made. And now I need to wait for next summer, when I will plant, water and harvest again.
So it was great luck for me when I found local farmer plums in our market. Fresh, sweet and very very tasty. Now we will have plenty of plums for breakfast and snack times.
And today I decide to make treat for us from these tasty fruits - sweet plum cake.
Cooking time: 40 min
Serves: 6
150 g/ 5 oz unsalted butter
160 g/5.6 oz caster sugar
4 large eggs
125 ml/ 1/2 cup milk
1 tsp baking powder
1tsp vanilla sugar
300 g/ 10 oz self-raising flour
1.50 kg/ 3lb plums
Preheat oven to 200 C/ 390 F.
Put bowl of butter in pot of very hot or boiling water and let butter melt completely.
Remove bowl from hot water pot and add sugar. Mix it in to butter very well.
Beat eggs and butter mixture in to white foam. As my tiny arm is not so strong, I use simple electrical mixer. Fast and easy.
Add flour, backing powder and vanilla sugar.
Mix everything together very well.
Dough should be thick and just like pate.
Before I put dough in backing form, I washed plums, cut them in half’s and took out plum hears. Then I place all of them in to form so I know how many of them I need to fill in form.
Then it is time for dough to go in backing form.
Place plums on top of dough and slightly push them in to dough.
Place backing form in to oven and let it bake for 40 min until golden grown and try good old trick with skewer. If it is ready, remove from oven and leave to cool. Then sprinkle slightly with icing sugar.
I love this cake because of it flavor differences between cake and baked plums.
