Cod with seasoned vegetables

One of my favorite dishes are from French kitchen. I like the freshness and simplicity what is similar to my home country food. Today I tried to cook fish dish and choose cod fillet. I pick this fabulous recipe from Fran Warde book `New Bistro`.I’m making this recipe for the first time and I hope it will be exactly what I’m looking for today. I know that after this dish I will love French kitchen even more. So let’s try.

Cooking time: 120 min

Serves: 4

4 tbsp olive oil

1kg / 2lb / 4oz new potatoes,

2 garlic bulbs

6 carrots, peeled and cut into lengths

3 leeks, trimmed and cut into lengths

Bunch of parsley stalks

1 kg/ 2lb/ 4oz cot fillet

1 lemon, sliced

Sea salt and freshly ground black pepper

Cut new potatoes in quarters and put in fry pan. Cut garlic bulbs in half and add to potatoes. Add olive oil and mix everything together very well. Put potatoes in preheated oven up to 180 degrees Celsius. Don’t forget to stir potatoes time after time. Meanwhile cut carrots and leeks and chop parsley stalks. After 30 minutes add carrots to potatoes and if needed stir extra olive oil. Put in oven for 10 more minutes. Remove the pan from the oven and set aside the garlic bulbs. Add the leeks and parsley stalks to the pan and stir the vegetables to mix. Put the pan back in to the oven for 10 more minutes.

Meanwhile cut the lemon and one garlic bulb in to the slices or small paces. Remove the pan from oven and place the cod fillet on top of the vegetables. Cover all vegetables with cod fillet and put sliced lemon and garlic on top , salt and pepper on the top of cot. Cover with baking parchment and bake for 15 – 20 minutes, then remove the paper and cook for a further 10 minutes until the fish and vegetables are tender.
